Until chef Weerawat “Num” Triyasenawat returned home to open this casual eatery in his family’s old tailor shop, there were few restaurants in Isaan that had attracted the attention of international gourmands. Now there is something of a farm-to-table movement sweeping through this lush province and chef Num is at the helm. His menus focus on traditional Thai ingredients, all farmed or foraged within 100km, and contemporary Western techniques honed over his decade spent in top kitchens in California. A signature serve of confit sour fish with spicy pickled plum, miso sauce and rice in watermelon soup is as warming yet intense as an afternoon in the Thai sun.
