Within the palatial white walls of the restaurant building – reminiscent of a Thai temple – Portuguese chef Ricado Nunes (alumni of Bangkok’s Potong, and London’s Ikoyi and La Dame de Pic) battles against time, utilising a fascination with fermentation to meddle with bold, funky flavours. You’ll walk past jars of their colourful experiments in the lobby; grasshopper garum, melon and kiwi vinegar and red kumquat syrup all utilise hyper-local ingredients, with 90 per cent of Nunes’ produce sourced from Phuket or the Andaman Sea.Two seasonal tasting menus of 10 or 8 ‘moments’ are matched with natural wine or juice pairings. Daily changing dishes might include black grouper with lacto-fermented green apple and pandan juice, or blushing duck breast cured in aspergillus sojae. This is a deep exploration of Phuket’s larders results in a reconceptualised Thai cuisine that offers an immersive, inventive dining experience.
