Cult Bistro

Tunis, Tunisia

Despite the neutral interiors – save for gorgeous green plants – this hip and happening spot in the Tunisian capital is anything but beige. Having studied at Le Cordon Bleu and worked under culinary French powerhouse Joël Robuchon, Tunisian born-and-bred chef-owner Slim Douiri positively delights in serving the surprising and unexpected, from grilled fillet of ombrine with coffee-spiked sweet potato purée and miso-glazed courgettes, oyster mushrooms and beef jus to tuna bao stuffed with tuna tartare, fermented peach and a touch of kimchi. Douiri’s ethos – immortalised in neon on the wall – is: ‘normal is boring’.
