Sitting on the top floor of the Novotel Bosphorus in the hip Karaköy region of Istanbul, the restaurant comes with a side of stunning peninsula views, but you might find yourself more interested in what’s going on in the central open kitchen, which it lit up by various wood- and charcoal- fired grills, smokers and ovens that char the Anatolian and Aegean dishes to perfection. Expect unfussy plates and big, bold flavours, such as slow roasted lamb shoulder with freekeh pilaf and the grilled octopus with charred vegetables and dry cacık, the Turkish yogurt and mint side dish, both of which have turned into Mürver signatures having remained on the menu since the 2017 opening. And following a “what grows together, goes together” mantra, locally sourced produce and regional classics are complemented by a wine list focusing on indigenous grape varieties.
