Mürver has one of the best views in Istanbul, perched atop the city's Novotel. A temple to cooking over live fire, the restaurant's open kitchen is illuminated by its vast, domed wood oven, clad in shimmering turquoise tiles. There's also a wrap-around terrace all the better to enjoy vistas across the Bosphorous, towards the city's landmark Maiden's Tower of Kiz Kulesi and the Topkapi Palace. When it comes to food, local produce is enhanced by flames, with dishes like oven-baked peaches and Obruk cheese with rocket, quince molasses and green beans, or 12-hour-braised beef rib with roasted artichokes, black-eyed peas, charred pepper sauce and buffalo yoghurt. There's also a chic cocktail bar on site, which you won't want to miss.
