Counting sheikhs and rap stars among returning guests, Gaia is a Greek-Mediterranean tour de force. With its predominantly white palette, the dining room is designed to represent a contemporary taverna, with marble detailing, stone tiling and black-and-white photography on the walls. The menu, from chefs Izu Ani, ex-La Petite Maison, and his long-standing Greek chef de cuisine Orestis Kotefas, is inspired by the Greek Islands, with super-fresh seafood at the fore. An ‘ice market’ is a focal point, where seasonal produce is hand-picked and cooked to order.
