Farm-to-fork meets fine dining at this Grade II-listed 16th-century farmhouse in the verdant Lancashire countryside. Heading up the kitchen is local lad Mark Birchall, whose pedigree includes a Roux Scholarship, heading the kitchen at L'Enclume and time at El Celler de Can Roca. His pretty plates are a love letter to regional produce. Wild and homegrown ingredients reign supreme here: think crab and turnip with anise hyssop and sunflower seeds or apple with woodruff, birch sap and marigold. A convivial barn-like dining room – all tall ceilings, glass and wood – provides the backdrop to what was crowned the UK’s best at the 2019 National Restaurant Awards. The seven bedrooms are superb, too.
