A sparse fit out, including chairs from a local church, belies the flare of five-course tasting menus that change daily. Think a single spear of white asparagus wrapped in lard, or an Irish take on a gougère made with deliciously mature Coolattin cheddar and beer. Throw in wines from unusual regions such as Corsica, interesting craft beers and a broad selection of Irish craft gins and you'll understand why booking is essential.
