A love of nature runs deep at L’Enclume. The mothership of chef Simon Rogan’s empire, it's housed amid rolling hills in Cartmel’s old smithy. While the design may feature rugged whitewashed walls and abundant natural materials, the 20-course tasting menu is anything but rustic. Evolving with the seasons – fed by an on-site farm – flavour is mined from unassuming ingredients, and imaginatively combined using cutting-edge technique. Edible flowers are signature, while a gentle nod to British classics is best seen in the likes of truffle dumpling and aged veal in coal oil, shallot and oxalis. Sixteen rooms are available for those wanting to stay in the Lake District village, with breakfast at sister restaurant Rogan & Co included.
