Amaya has become a London institution since it opened in 2004, famed for serving a flavoursome fusion of Indian fine dining and tapas-style sharing plates. Much of the theatre unfolds around the restaurant's open grill, where duskily dressed chefs cook over charcoal flames, sending out a steady stream of smoky dishes, vibrant salads and fragrant desserts. Highlights include tandoori wild prawns, smoked chilli lamb chops and chargrilled aubergine tikka, all of which arrive in quick succession for the table to share. A quartet of chutneys accompanies many dishes, their flavours shifting with the seasons, from floral rose to tangy quince.
