Since the restaurant opened in 2020, Santiago Lastra’s Kol has become one of the absolute go-tos in London scene. The ‘nomadic chef’, as he is often known by his peers, cut his teeth in world-class restaurants such as Noma, under the gaze of legendary René Redzepi, and Mugaritz with Andoni Luis Aduriz, before setting up shop in the UK capital’s well-heeled Mayfair neighbourhood. Oozing Mexican spirit and bursting with central American flavours but always using British seasonal produce, Kol’s dishes are authentic and inventive, including the likes of langoustine tacos, butternut squash with sour ants and mackerel and rhubarb chalupa (a Oaxacan take on a corn-based taco). Downstairs, you’ll find the Mezcaleria, where diners seeking out aperitifs or those just passing through are invited to sample brilliant mezcal-laced cocktails. The drinks menu features a carefully curated selection of small-batch agave spirits and whiskies, which will are winning the bar plaudits on the international stage.
