Velvet by Salvatore Calabrese

London, UK

Hear 'the music of the shake’ at Velvet, the Corinthia London’s late-night champagne and cocktail bar created by global powerhouse Salvatore Calabrese, also known as The Maestro. Timelessness and class is The Maestro's MO, so naturally the space is bedecked with velvet furnishings; if you catch Salvatore in action, he’s likely to be sporting a dapper velvet jacket too. But don't be fooled by the old world opulence: Velvet is far from being stuck in the past. Its latest menu, The Pixel Book, looks to the modern world of AI to supercharge its drinks programme, with each drink inspired by a landmark piece of art that's been reimagined for the modern day. Take the Yankee's Gloom, for example, where the bargoers of Edward Hopper's 1942 piece Nighthawks have been replaced with office workers huddled over laptops, adapted as a drink into an earthy combination of rum, corn, pear liquor and salted maple. For a seasonal fix, the Soup of the Day swaps Campbell's for Calabrese and switches up its flavour depending on the best produce available for the time of year. Don't forget to look around the room to see all of the artwork created for the menu proudly printed and hung up around the space.
