Kent gastropub The Sportsman has grown a huge fanbase since its 1999 launch, on the same site where an inn has stood since 1642. Passionate chef-patron Stephen Harris’ hyperlocal menu showcases herbs, fruits and vegetables from his kitchen garden and polytunnel, oysters and fish from the North Sea and meat and game from nearby marshland and woods – even the salt on the table is reclaimed from the beach. Minimum cheffy intervention sees ingredients shine in dishes such as crab, carrot and hollandaise, and roast saddle of lamb with mint sauce.
