The Black Swan at Oldstead

Set on the edge of the North York Moors, this place has evolved from a country pub into one of Britain’s finest restaurants. Owned and run by chef Tommy Banks and his family, it’s long been a champion of hyper-local, field-to-fork dining, with the fields in question often belonging to the family’s own farm. It’s a remit that the kitchen takes seriously, which means seafood's now off the menu. Happily, they still have plenty to work with, from spring’s rhubarb and wild garlic to autumnal game and hedgerow berries. The heirloom beets are a signature, slow-cooked in Dexter beef fat, but also sometimes served as exquisite petit-fours, dusted with sweet cicely sherbet. Tours of the kitchen gardens are offered in summer, and it’s always worth staying the night: the wine cellars are amply stocked, and the breakfasts the next morning are superb.
