Since 1971, Chez Panisse has pioneered countless practices that have come to define how America eats, from popularising goat’s cheese in the Eighties to listing the individual farms and producers who provide their ingredients among the dish descriptions on its daily changing menus. Alice Waters, a former school teacher-turned-chef-turned-political activist and food evangelist, is the force behind it all. Accordingly, the restaurant's ethos is defined by local, organic produce and sustainable farming practices. Its cuisine is undeniably French and quintessentially Californian. The four-course prix fixe menus are uploaded online each week, but for those with allergies or restrictions they advise going a la carte in the café upstairs. The prix fixe in spring had tempting plates such as local halibut tartare with golden beets and fried capers, Pennyroyal Farm goat cheese pudding soufflé and Wolfe Ranch quail grilled over manzanita wood cuttings. Desserts from a Huckleberry frangipane tart to a mint and strawberry ice cream meringata are well worth an indulge.
