To step into an almost-hidden alleyway and through Oriole's unassuming front door is the entrance to chef Noah Sandoval's universe. Inside the West Loop restaurant, exposed brick walls and massive wooden beams line the dramatically lit space, creating an atmosphere akin to a chic warehouse dinner party reserved exclusively for those in-the-know. Since opening in 2016, the extended tasting menus contain elements of global cuisines, with dishes rotating and evolving constantly and consistently. Drinks pairings from Emily Rosenfeld include a variety of interesting pours, from saké to farmhouse cider to vintage Barbaresco. A noteworthy cocktail and spirit-free programme designed by world-famous bartender Julia Momose is the icing on the cake.
