Vespertine is where chef Jordan Kahn explores what happens at the intersection of food and architecture, sound and taste, art and sculpture. The immersive dining experience takes place within a custom-built space designed by architect Eric Owen Moss, marked by twisted steel and glass, and punctuated by a transportive soundscape composed by chef Kahn in collaboration with renowned musicians. A veteran of The French Laundry, Per Se and Alinea, chef Kahn cooks with a style completely unlike his famous mentors, integrating his personal identity and global travels into multi-course, multi-sensory tasting experiences that defy any form of categorisation. Sustainability is integrated through imaginative cross-utilisation, such as a caramelised sourdough pancake with cured lamb fat, a byproduct from an earlier course of spring lamb. In short, Vespertine is an altogether unique restaurant that must be experienced first-hand to be understood.
