Shining a light on Bordeaux blends from California's cool-climate Sonoma County and Alexander Valley, Aperture Cellars has vines dating back to 1912 and is the brainchild of bright spark Jesse Katz, who cut his teeth at Screaming Eagle and has since gone on to make wine for Justin Timberlake and Jessica Biel. Designed by Signum Architecture to make the most of the natural light, the winery pays homage to Jesse Katz's father, acclaimed photographer Andy Katz, and features a gallery showcasing exhibitions from up-and-coming photographers. Amateur snappers can join Katz senior on a photography masterclass in the Russian River Valley that ends in a private wine tasting, while budding oenologists can take part in hands-on blending sessions, creating their own bespoke bottlings before enjoying lunch in the cellar.
