For years, his produce came exclusively from Love Apple Farm, just 20 minutes down the road. Now Kinch relies on a trusted network of California farmers, ranchers, foragers and fishermen to stock the restaurant's spectacular larder. An avid surfer, Kinch finds inspiration near and far, from the tidal pools along the coastline to the avant-garde chefs of Spain and the traditional kaiseki practitioners of Japan. He is also a vegetable magician, coaxing transcendent flavours out of the humblest of ingredients.
