Opened by Top Chef season 13 winner Jeremy Ford back in 2017, Stubborn Seed’s name pays homage to the persistence required to open a restaurant. The intimate space marries concrete with warm wooden notes, tables are matte black and burlap napkins are tied with herb sprigs. Grounded in a sustainability-led ethos, local partnerships like Compost for Life and produce from chef Ford's Homestead-based farm to inform a menu that looks to the future as much as it does to flavour. Fusing Asian and Latin influences, the a la carte and three-tier tasting menu delivers intricately composed plates. Dishes rotate every few weeks and can range from rom ginger- and citrus-cured Japanese yellowtail with tomato consommé and umami citrus granita to braised leek and Gruyère raviolo finished with potato espuma and crispy smoked pork belly. Edible flowers are liberally used to embellish Ford's dishes, plus there's a stellar line-up of crafted cocktails.
