A cube-shaped marble counter in an otherwise bare room ensures all eyes are kept on the performance occurring in the open kitchen at the centre. And what a performance it is. Head chef Will Aghajanian and pastry chef Liz Johnson, who took the helm in early 2019, first met in the hallowed kitchens of Noma. Their 12-course tasting menus are equally obsessed with creating a sense of place. Expect playful plates such as duck tartare scattered with cashew and rose essence, bay scallop with rambutan (an Indonesian fruit) and pungent horseradish, baked potato aligot with juniper resin and, for dessert, dark roux ice cream.
