He started cooking at the tender age of 14 and Daniel Boulud still beams with boyish excitement from behind the stoves of his eponymous Upper East Side flagship. After cutting his teeth with French titans like Roger Vergé, Georges Blanc and Michel Guérard, Boulud brought his own elegant, old-world style and grandeur to New York, where this restaurant has thrived since 1993. His menus abound with updated classics, each bearing the thumb print of a chef who effortlessly balances tradition and modernity. The tasting menu features seven courses and showcases signatures such as veal tenderloin with sweetbreads, Maine lobster and, when available, the spectacular Canard à la Presse – for two to four people, it must be pre-ordered with 24 hours' notice. Considering the theatricality of the service (having been roasted to perfection, the rich, flavourful juices are extracted using a traditional press to create a delicious sauce), all the fuss over it is perfectly valid. Vegetarian menus, as well as three- and five-course prix-fixe options, allow for plenty of choice and differing budgets.
