Moon Rabbit reads like a love letter to chef-owner Kevin Tien's Vietnamese heritage and his childhood growing up in the American South. The menu introduces hard-to-find Vietnamese staples with a Southern touch, such as the crisp water fern rice cake (bánh bèo) with briny sunchoke XO sauce. Notable dishes borrow techniques from other cultures: take for instance the wagyu wrapped in perilla leaves with labneh and fermented honey, or the monkfish encasing a fish ball-inspired mousseline. The drinks are equally experimental, such as the Pho Dac Biet: a noodle-inspired cocktail blending beef broth-washed Japanese vodka, house pho seasoning and a coriander mist. The savoury theme extends to the dessert menu, which features a signature green curry sponge cake with fish sauce caramel.
