Japanese cuisine has conquered the world, all the way to Nebraska’s capital city – which, in turn, is making its own version. Yoshitomo gets what it is that makes traditional sushi great without being afraid to innovate, peppering its menu with creative tweaks that give the cuisine its own local spin. Exhibit A is the rodeo maki – with imperial wagyu, pickle, panko breadcrumbs, kewpie mayo and tonkatsu sauce. Khaleesi maki, with salmon, sundried tomato, avocado shallot and lemon is another great example. Other dishes get even more innovative, for example ‘noritos’ (fish chips, smoked salmon pate and ikura (salmon eggs) or carbonara featuring scallop, XO sauce, parmesan and yuzu. The relaxed atmosphere, with its bar lined in wood chairs and homely tables, keeps sights firmly focused on the food, which is no bad thing.
