Combining their vision of upscale New American dining and drinking in a casual-comfortable setting, former French Laundry alumni Anthony Secviar (chef) and Dennis Kelly (master sommelier) opened Protégé in 2018. Nine months later and the colonnaded restaurant in Palo Alto's leafy Evergreen Park had earned a Michelin star. They offer two dining experiences here: order a la carte in The Lounge or sample the seven-course tasting menu in The Dining Room. Highlights might include a nine-layer lasagne incorporating porcini marmalade; a sunflower 'Caesar' with smoked trout rillette and red butter lettuce; brick chicken with piperade, chorizo and capers; and nettle agnolotti served with green asparagus and walnut-pistou. The wine programme is naturally superb, highlighting the world's most exceptional vintages, and you can enjoy a cocktail at the elegant curved bar.
