A sprawling estate an hour north of Manhattan is home to one of America's most truly unique restaurants. In a beautifully appointed barn, vegetable guru Dan Barber – winner of the 50 Best Chefs' Choice Award in 2018 – shares an edible snapshot of the surrounding farm via a mammoth 30-course tasting menu. From the bountiful produce harvested each day in the fields, to just-laid eggs and the cellared pickles and preserves that carry one season's bounty into the next, each meal is a celebration. An endless tinkerer, Barber has also developed his own seeds, like habanero peppers with no heat; miniature, super-sweet honeynut squash; even a strain of wheat that bears his name and goes into the restaurant's excellent bread. The best part? Tasting menus include a tour of the farm before the meal commences. The restaurant no longer has a phone in operation, but reservations can be made via email.
