Contemporary Californian haute cuisine is the modus operandi at Addison, San Diego’s first restaurant with three Michelin stars. Located at the Fairmont Grand Del Mar hotel, the exclusive restaurant sits pretty in the Carmel Valley hillside, with a dining room defined by high ceilings and arched windows that frame the exquisite views beyond. The restaurant is helmed by award-winning chef William Bradley, who applies French technique to ingredients from California while occasionally weaving in whimsical nods to Asian ingredients as well. The 10-course tasting menu dazzles, especially alongside expert wine pairings curated by lead sommelier Kyle South, often featuring special California vintages, as well as an exciting collection of rare champagnes. Chef Bradley's signature dish of Regiis Ova Reserve caviar with koshihikari rice, smoked sabayon, and sesame is a showstopper.
