Balkan Treat Box

St Louis, US

Don’t be surprised to find a queue outside this lo-fi Balkan canteen, debating what to order – pide or patlidzan? – or poring over the menu. Run by chef Loryn Nalic and her Bosnian husband, Edo, it started life as a food truck, before moving into permanent premises in Webster Groves. Its charismatic street-food eats are inspired by the Balkan Peninsula, from brown butter houmous, flecked with Aleppo chilli, to smoky, yoghurt-slathered kebabs. Most dishes are served with spectacular breads cooked in the wood-fired oven – the glowing, copper-clad centrepiece of Nalic's open kitchen. What to choose is a matter of debate, but the ćevapi should be a contender: a pillowy flatbread stuffed with grilled beef sausages, creamy kajmak and onions. Gently-blistered pide are another favourite, piled with cheese, chicken or beef, while the standout dessert is sutlijaš (rice pudding) with pistachio and rose petals.
