Capitalising on the enormous popularity of Rose's Luxury, his casual restaurant next door, chef Aaron Silverman opened this fine-dining follow-up in 2016. Fittingly, he called it Pineapple & Pearls, the former a symbol of hospitality and the latter of elegance. But this is no longer fine dining in the traditional sense. With a soundtrack of hi-energy tunes and disco ball-glitz, this is very much billed as a party every night, and guests are encouraged to dress ‘fancy’. A four-course (large portioned) seasonally changing tasting menu steals the show with dishes that diners yearn to return for: Marco’s gnocchi topped with Italian truffles, tender wagyu with cornbread takoyaki and crispy collard greens, and lamb loin with black forest cake and cherries. Creative beverage pairings range from sake and wine to tea and cocktails.
