Atlantis, The Palm, is a hotel that doesn’t do things by halves. The beachfront resort has it all, from a sweep of golden beach and the world’s largest waterpark to the most indulgent spa treatments and almost 30 dining options. The starriest of all must be FZN by Björn Frantzén (quite literally, it was awarded three Michelin stars in its first year). There are just 27 seats and only one menu. Meticulously conceptualised by the Swedish chef and realised by Torsten Vildgaard and his team, each course blends modern European fine dining with Japanese influences to perfection. But it’s as much about experience as eating. You ring a doorbell for entry, before being shown along a hall lined with pickling jars to a Scandi-cosy lounge area for canapés, followed by a brief introduction to the ingredients soon to appear on your plate, after which you’re shown to your seat, via the wine cellar, the prep kitchen and an introduction to the chefs. Most guests sit at a counter for a front-row view into the kitchen from where a series of one-of-a-kind dishes appear that aren’t just technically brilliant, they’re works of art.
