From the dishes to the design, Massimo Bottura’s first venture outside of Italy is inspired by the Sixties Riviera scene, with pops of pastel and retro dishes like prawn cocktail reigning supreme. Despite his serious credentials – Torno Subito earned a Michelin star in 2022 – the ever-original Bottura also flirts with fun presentation: lobster rolls are served in burger boxes, takeaway sandwiches come with cocktail umbrellas and his Wagyu beef has received the iconic Damien Hirst ‘splash’ treatment made famous by Bottura’s ‘psychedelic veal’ dish. And there’s as much substance as style, with comfort-food plates such as thick-crust pizza, fussilo al finochietto made with wild fennel leaf pesto, smoked eel stracciatella and topped with crunchy bread crumbs, or roasted lamb loin with Sicilian-style chickpea fritters and sautéed aubergine. Brunch is buoyant and buzzy, while dinner service feels a bit more grown-up.
