Chef Issam Koteich and co-founder Pedro Khalil have elevated Cordero as a hallmark of farm to table dining. They source 70% of the menu's meat, vegetables and dairy products from Cordero's own farm, which is a mere 40 minute drive from the restaurant. With a focus on lamb, Cordero is known for dextrously showcasing the many ways in which simple ingredients can be re-imagined. The à la carte offering includes 26 dishes that change according to the season, all of which are feature lamb or sheep, either as meat or in the form of dairy products. Among the options available are Lamb chicharon paired with sheep cheese and spicy sofrito,  as well as a main of lamb chops accompanied by a sweet garlic curry, fresh peas and banana. Its refined, softly lit dining room makes Cordero a standout destination for special occasions, where guests can sample and learn about local farm-driven cuisine.
