The winner of the One To Watch Award for Latin America’s 50 Best Restaurant 2023 is a pioneer of the farm-to-table concept in Caracas. The project, led by chef Issam Koteich and co-founder Pedro Khalil, sources its meat, vegetables and dairy products from its own farm, Proyecto Ubre, located only 40 minutes away from the restaurant.

Cordero lives up to its name with a menu focused solely on lamb. The à la carte offering includes 26 dishes that change according to the season, all of which are feature lamb or sheep, either as meat or in the form of dairy products. Among the options available are carpaccio with basil, pine nuts and olive oil, cured cheese and tequeños – which are breaded and fried cheese sticks, a popular snack in Venezuela. The filling for the tequeños includes sheep's milk mozzarella as well (of course).
