There’s a lot to love about this trailblazing pick from Aussie mixologist Jay Moir. With its on-site garden and raft of living walls, Summer Experiment has set the tone for sustainability on Ho Chi Minh’s blossoming bar scene since its 2019 launch. Close to Ben Thanh Market, the verdant second-floor space comprises reclaimed furniture, a replete back bar – with an apothecary’s worth of dried edible flowers – and fragrant herb-laced terrace, making for an inviting, exciting welcome. Rooted in Vietnam’s flora, Moir’s focus is on experiential craft cocktails which utilise homegrown and locally procured ingredients (including many obscure fruits) and on-point technique. An illustrated menu guides guests through 30-odd naturalistic, fun-time creations that tease all the senses: case in point, 365 Days of Summer, served for sharing in a watering can and Milk Batch Baby, a nitro-frozen boozy ice cream with Roku gin, yuzu purée, green team and cream milk batch.
