A curvaceous mirrored exterior, dark interior walls, midnight blue velvet, waves of strip lights and craggy rock-formation bar – Hybrid bridges the void between galactic-inspired city stalwart and coastal cool. Here, amid the bustle of Nha Trang on Vietnam’s east coast, local boy Lam Duong has created a contemporary speakeasy with a universal language that drinks lovers from both near and far can appreciate. Opened in 2019, artistic – sometimes molecular – concoctions on the seasonal menu champion local and oft-forgotten ingredients and undulate from the surprisingly harmonious Anchovy Punch (cured anchovy cream-washed rum, coconut, fish sauce and fig leaf) to Golden Apple Boy which sees whisky joined with Mancino secco, sarsi bark, sour apple, marigold and caramel. Waste bar ingredients make their way to the kitchen and reappear in the likes of Ibérico katsu sandos with spiced teriyaki sauce and tasty soft shell crab tempura.
