Location, location, location: Situated in the design-led Magnolia Hotel in Santiago's historical Bellas Artes neighbourhood, Demo Magnolia puts a sense of place at the heart of the menu. The multi-course experience acts as an edible map of Santiago, showcasing the diverse nature of the Chilean capital's cuisine, from the abundance of fresh produce from La Vega and meat-driven food culture in Franklin, to the Asian influences that have long shaped Santiago's culinary landscape.

What's in a name? The name 'demo' refers to both demonstration and democratisation, pointing to the restaurant's guiding mission to bring fine dining closer to the city's heart. It's a space where culinary creativity meets Santiago's urban and historic identity; the city's varied culinary traditions are reimagined through a contemporary lens.

Chef CV: The mind behind Demo is chef Pedro Chavarría, who focuses on combining creative and modern techniques with respect for local ingredients. Prior to opening Demo in October 2024, Chavarría spent time in some of Latin America's most renowned kitchens, including Santiago's Boragó and Quintonil in Mexico City.

The experience: The tasting menu experience, which spans more than 10 courses, takes place in Demo Magnolia's 15-seater dining room; an intimate affair celebrating locally sourced ingredients, transformed by Chavarría's highly refined touches. Snacks include yellow langoustine croquette with salsa roja, while tofu with noodles and vegetable broth and duck breast with salsa oriental form the latter section of the tasting menu.

Sweet sensation: Desserts aren't to be missed, with savoury ice creams flavoured with jerusalem artichoke and corn, depending on the season, and dishes like seaweed and cheesecake tart are standouts.
