Leo Paixão, who is from southeastern Brazil, originally started out studying medicine. Luckily for diners, he changed direction, bringing his haute cuisine techniques and the many flavours of Minas Gerais state together at Glouton, which he opened in Belo Horizonte in 2013. Exposed brick walls, an adorable garden and a relaxed ambience awaits, with tropical prints and plants adding a vibrancy. African, Portuguese and Indigenous food cultures blur the culinary lines here, with rustic regional favourites – slow-cooked meats, fresh local cheeses, beans, corn and cassava – cooked with a French touch. Hits on the seasonal menu include piglet with crispy farofa (toasted cassava flour), apple and cachaça; octopus rice; and grilled shrimp with thermidor pappardelle. If it's available, order the jewel-like Bom Bocado served with creamy dulce de leche and guava sorbet.
