A beautifully restored 1920s mansion in the Palermo neighbourhood of Buenos Aires is the setting for this buzzing Peruvian seafood restaurant. Chef Gastón Acurio kickstarted a latent ceviche craze in the steak-loving Argentinian capital when he opened this specialist spot in 2015. Now overseen by his right-hand man, Gustavo Montestruque, the fresh, breezy menu specialises in variations of Peru’s national dish.

One of six La Mar outposts across the globe, the no-reservations Buenos Aires branch trod new ground on opening with its use of local Atlantic produce from Argentine fishermen. Today, the menu sources sustainably-caught seafood – scallops from Rawson, San Blas oysters and Mar del Plata anchovies ­– to wow diners with fresh flavours. Dishes includes classic mixed fish ceviche, three-pepper sole tiradito, and – on occasion ­­–­ whole lobster marinated in a lime-laced leche de tigre.
