The genesis: When Lisa and Christopher Binns opened Stush in the Bush in 2009, not only were they creating Jamaica's first true plant-based, fine-dining experience, they were pioneering a new way of presenting the way provision food was prepared as a reimagined movement of Caribbean cuisine. Set on their sustainable and regenerative ZionItes Farm in the hills of Free Hill, St. Ann, this restaurant invites a holistic approach to dining.
Immerse yourself: Everything served comes from the regenerative garden or neighbouring farms, all served on plateware that speaks to the dishes prepared using Ital (the vegan Rastafarian movement) principles. The prix fixe experience includes a guided walk through the grounds with Christopher (sometimes barefoot), where guests learn about medicinal herbs, sample fresh produce and even plant seeds to greet them on future visits. It's a five-hour immersion into sustainable luxury where simplicity meets sophistication.
Philosophy in practice: The Binns reimagine traditional Jamaican flavours through a plant-based lens, constantly surprising and delighting meat eaters. Imagine plantain gnocchi with callaloo pesto, jackfruit tacos with the Blow Fiyah house-made sauces, or the famous roasted pumpkin hummus (yes, there are Middle Eastern inspirations in Caribbean cuisine). Every element, from the almond 'ricotta' to the scotch bonnet-infused condiments, is crafted on-site.
Beyond the plate: This commitment to sustainability extends throughout the property. Boasting solar power, rainwater harvesting, composting systems and zero-waste practices demonstrate that fine dining and environmental consciousness aren't mutually exclusive. The couple even produce their own plant-based milks and artisanal product line.
The experience: Open only on Fridays and Sundays at 1pm, reservations are essential for this special dining adventure that has earned multiple Jamaica Observer Table Talk Food Awards and attracted food lovers from across the globe.
