Perfectly executed classic Cantonese cuisine

What is it? It's called the ‘tycoon's canteen’ because it has so many wealthy regular clients – the first clue is the hoard of luxury vehicles parked outside the restaurant on this unassuming stretch of Johnston Road in Wan Chai. Diners won't see that many famous faces once inside, though, because it's likely they're eating in one of the many private rooms.

On the menu: Must-eat dishes include Cantonese classics such as roast suckling pig, baked stuffed crab shell with fresh crab meat and onions, wok-fried frog's legs, sautéed lobster with black beans and chilli sauce and glutinous rice with preserved meats. For tycoons – or those feeling flush – there are plenty of expensive dishes featuring dried seafood and bird's nests.

Do they serve dim sum? Of course, and it's very good, indeed. The dishes are cooked to order and served as soon as they're ready, so the steamed items are light and delicate, while the fried ones are hot and crisp.

Other ventures: While the Wan Chai location is the original restaurant, there's also a branch across the harbour, in Tsim Sha Tsui, as well as one in Macau.
