X-Treme Chinese cuisine by ‘Demon Chef’ Alvin Leung

What is X-Treme cuisine? Chef Alvin Leung’s signature cuisine is a fusion of modernist techniques with Cantonese cooking, using a marriage of local and imported ingredients. Think “pat chun” vinegar and Chinese “lam kok” olives with imported delicacies such as sea urchin and black truffles.

About the chef: Born in Britain to Chinese parents and raised in Canada, the autodidact chef-owner of Bo Innovation, Alvin Leung, was trained as an acoustic engineer and worked as one for 20 years before he decided to start a restaurant without any formal training.

What to expect on the plate: The pork broth-enriched molecular xiao long bao and “sex on the beach”, a dish of edible condom filled with honey and ham on a beach made of mushroom.

Chef sightings: If you thought he looked recognisable, it’s probably because you’ve seen him on TV. Leung appeared on Around the World in 80 Plates and served as one of three judges in MasterChef Canada. He was also a judge in Wok Stars and The Listener’s “Amuse Bouche” episode.

Other ventures: In April 2015, Leung opened R&D in Toronto with Eric Chong, winner of season one of MasterChef Canada. The restaurant serves new-age Asian cuisine.
