Epicurean reprieve in Macau’s bustling entertainment capital

A haute cuisine haven: Amidst the hullabaloo of the City of Dreams mega-hotel complex, which boasts every form of entertainment from boutique shopping and shows to raucous nightclubs and restaurants, there is a more hushed and subdued atmosphere at The Tasting Room by Galliot.

On the menu: French chef Guillaume Galliot goes to great lengths to source quality ingredients from around the world. To start, try the foie gras ravioli and pumpkin purée, then follow it up with slow-cooked turbot with culatello ham and a comté cheese emulsion. Ingredients and dishes change with the seasons.

And to accompany the food… Wine director João Pires, once of Heston Blumenthal’s The Fat Duck, oversees a heavyweight list. It includes a selection of Chateau Mouton Rothschild vintages stretching from 1945 to 2011 as well as blockbusters from Burgundy and Chateauneuf-du-Pape.

Extra stars: Galliot cooked for Leonardo DiCaprio, Robert de Niro and Mariah Carey at a lavish dinner to celebrate the opening of a Hollywood-themed hotel in Macau. Fellow chefs included Alain Ducasse and uber-pâtissier Pierre Hermé, the 2016 World’s Best Pastry Chef.
