A temple to Thai gastronomy

Voted The S.Pellegrino Best Restaurant in Asia in last year’s list, Nahm remains one of the finest Thai restaurants in the world, thanks to David Thompson and head chef Prin Polsuk’s stellar cooking and forensic attention to detail. The Australian-born chef-restaurateur takes an almost obsessive approach to authenticity. His outlook is both retrospective – he studies century-old cookbooks of long departed Thai matriarchs – and forward-thinking, with some plates taking influence from contemporary That street-food dishes.

His dishes demonstrate Thompson’s keen understanding of the balance of salt, spice, sweet and sour, as well as the fermented and smoky notes in Thai cooking, with a wide-ranging menu that includes cured catfish minced with shallots, served with grilled salted beef and vegetables; and kaffir lime and smoked fish relish with sweet pork, salted fish dumplings and coconut-poached bamboo. The understated but elegant dining room, meanwhile, influenced by ancient Siamese temples, provides a serene setting for what is an exciting, invigorating and unstuffy dining experience.
