Photography is forbidden inside the main dining room at Quintessence, one of only four restaurants to have held three Michelin stars since the first edition of the Tokyo's Michelin guide was published in 2007. Shuzo Kishida has built a reputation for some of the best modern French cuisine in the city, using skills gained at L'Astrance in Paris under his mentor Pascal Barbot. His multi-course carte blanche menu is constantly evolving – premium products are selected daily from the market – but lily bulb (a slightly sweet root vegetable), foie gras and sea salt and olive oil bavarois make regular appearances. The seasoning and cooking techniques here are paramount, with the kitchen roasting over low temperatures for hours to enhance the flavours. A wine cellar has more than 600 varieties of, mainly, French wine. Reservations are hard to come by (and must be made months in advance).
