Alex Atala’s ground-breaking São Paulo restaurant has helped put South American – and in particular indigenous Brazilian and Amazonian – cuisine on the international map, raising the profile of his country’s food in a way few could have dreamed possible a few years ago.
The pioneering chef is also part-historian and part-botanist, thanks to his trips into the Amazon to test potential ingredients for his menu, and has become a champion of sustainability and ethical practice. Atala, for example, owns an area of Amazonia where 30 to 40 families live in peace; his only request is occasionally and sensitively to forage the area, which is rich in local produce, for his research and development work.
It all results in imaginative but still delicious dishes served at this most special and progressive of restaurants in the heart of one of the world’s most vibrant cities.
