The small, dark and unassuming dining room at Pujol doesn’t prepare diners for the experiences they are about to have. Similarly, the menu descriptions don’t convey the complexity of what’s going on in the kitchen, at the table – and ultimately, on the palate.
What you are eating when you bite into the small ‘elote con mayonesa de hormiga chicatana, café and chile costeño’, is not just a little and delicious ear of corn, but an open door to the possibilities of renewed Mexican tradition. The same goes for the ‘taco de langosta, longaniza, frijol and hoja santa’. While most will have tasted tacos before, they will surely never have experienced a taco like this – both delicious and sophisticated. To say Enrique Olvera’s food strikes a chord in the memory, even if one hasn’t tasted Mexico before, is an understatement. What he is actually doing is building future memories for Mexican cuisine.
