Chief reason to visit: Roberta Sudbrack's eponymous restaurant focuses entirely on natural techniques: there is no machinery, just hands and fire, so everything from the beetroot ravioli to her signature smoked okra is lovingly hand-crafted.

A few words on the chef: Dubbed the “Pelé of Brazilian gastronomy”, Sudbrack made her name as head chef at Brazil’s presidential palace. During her eight-year stint under President Fernando Henrique Cardoso, she cooked for everyone from Fidel Castro to Prince Charles.

Typical dishes: Smoked okra slowly grilled, served with semi-cooked shrimp and vegetable caviar; beetroot ravioli.

What’s the dining space like: Channelling the chef’s palatial beginnings, Sudbrack has a banquet-style table for private dinners, while the main restaurant sits on a leafy veranda inspired by the bars of Rio de Janeiro.

Where it all began: Roberta started off selling hotdogs from a cart in Rio so it was only natural that she return to her roots with her newest mobile venture, Sud Truck.
