Bogotá’s premier destination overseen by the formidable Rausch brothers

Brothers Jorge and Mark Rausch have won celebrity status thanks to their TV shows, cookery books and restaurant empire, but it all began with the opening of Criterión in 2003. Chef-owner Jorge worked in England at Le Manoir aux Quat’Saisons for many years, while Mark, who heads up the pastry section, trained in Canada.

Their flagship restaurant remains a culinary reference point for Colombia’s new generation of chefs, with a distinct French accent to dishes such as tournedos Rossini and pear and Roquefort salad. There are also contemporary international influences, demonstrated in creations such as steak tartare with tomato jellies and crispy potato ‘Pringles style’.

The distinctive dining room, with purple banquettes and ornate silver mirrors, is a destination for Colombia’s rich and famous, many of whom appreciate the excellent wine list.
