An exploration of Paraguayan cuisine in a relaxed setting

In a nutshell: With a mission to revive recipes from indigenous tribes, Tierra Colorada Gastro serves colourful creations using Paraguayan products and flavours.

About the chef: Rodolfo Angenscheidt learned his trade at Maxim’s in Paris and Le Cordon Bleu in London and has worked for such esteemed chefs around the globe as Michel Roux, Gordon Ramsay, Martin Berasategui and Mauro Colagreco. He opened Tierra Colorada in the Paraguayan capital in 2010.

On the menu: Angenscheidt’s dishes include local fish such as surubi, hearty racks of lamb as well as risottos and pastas. Another speciality is the loin of Bradford beef, a Paraguayan breed. There’s also an extensive wine list offering some of South America’s finest bins.

Indigenous ingredients: Inspiration for Tierra Colorada’s plates come from the ancient recipes of the Toba and Payagua tribes, as well as the more well-known Guarani Indians.
