For those that thought Mexican food was just tacos and burritos, Corazon De Tierra has proven otherwise, with chef Diego Hernandez consistently reinventing favourites and championing purity of flavour.
Hidden away in the depths of the Guadalupe Valley on the same site as a boutique hotel and winery, Corazon De Tierra is housed in an elevated wooden building made entirely from recycled materials. With its name translating as ‘Heart of the Land’, the restaurant is a true exploration of nature’s bounty; producing its own olive oil and sourcing all of its ingredients on-site or within a few miles’ radius.
Hernandez and his passionate kitchen brigade use those ingredients to turn Mexican gastronomy into pure-tasting anthropology, with a daily-changing five-course tasting menu often mixing Baja, Mediterranean and Asian flavours. Getting a table here can be tricky, but those who persevere will be rewarded with one of Mexico’s most heartfelt and memorable dining experiences.
