Hommage
Tokyo, Japan
Set in the heart of Tokyo's tradition-steeped Asakusa district is this little slice of France. Owner/chef Noboru Arai opened Hommage in 2000 aged 26 as just that – a homage not just to the Gallic culinary arts he spent several years perfecting before returning home, but also to nature. The decor is no frills – no paintings on the walls, white tablecloths, simple wooden chairs – allowing the cooking to shine, using only the freshest ingredients. The set menus change with the seasons, but the quality is consistent, with dishes including mutton ravioli, cauliflower mousse and scallop tart coming highly recommended. The potato and leek cream vichyssoise topped with caviar is a signature – the wagyu beef belly wrapped in a wagyu bresaola ham is another favourite. The wine list is weighty with every manner of French vintage.
