Nutmeg & Clove

Singapore

Sip the fragrant flavours of Singapore

The DNA of this bar is Singapore in essence – it's as simple as that. The team, helmed by head bartender Yung, is proud of the city-state's heritage and history and strives to reinterpret Singaporean flavours into progressive cocktails, often using familiar local ingredients in a way that tells the stories of Singapore itself.

The latest menu Singlish celebrates the colloquial dialect of the Lion City, presented in a comic book-style artwork. The menu's opening cocktail, the Heng Ong Huat, takes its name from the phrase wishing prosperity luck and fortune, translated into a cocktail as a mix of gin, sherry, kumquat, oolong tea, citrus and clarified milk. Jialat – used to describe a terrible situation in Singlish – arrives as a fruity fizz of tequila, mango yellow pepper, coconut, saffron, cream, egg white and soda, designed as a drink to make any day brighter.

The team's love of its homeland extends to the food offering, too. Choose the chong qing wings and the Ikan Assam pedas, or the rendang mac and cheese for a satisfying bite of East meets West. Whatever you choose, all will fill your belly and warm the soul.
